I’ve gathered a few recipes from a few food blogs and wanted to share them with you! When I hear the term “healthy breakfast” I think of vegetables right away. It doesn’t have to be that way at all, healthy does mean it has to taste bad. I would prefer the doughnut and a
smoothie milkshake but we can’t always have that. Of course in moderation you can go for that donut and milkshake because I know I do…maybe a little more than in moderation…but its okay I know i can slowly fix that.
This first recipe I’m sharing with you is one you can prepare overnight. You can put your own spin on your additions. Maybe add some blueberries and honey or strawberries and cherries! The combinations are endless just make sure you keep the oats, milk, and yogurt in the recipe!
Nutella Banana Overnight Oatmeal
- 1/4 cup of uncooked old fashioned oats
- 1/4 cup of skim milk
- 1/4 cup of low fat yogurt
- 1/2 of a banana, sliced
- 1 heaping tablespoon of Nutella
- Add all of the ingredients to a jar or resealable container
- Give it a good shake or mix with a spoon
- Put it in the fridge overnight
- Take out of the fridge in the morning and grab a spoon!

The second recipe I’m sharing with you is one for when you have a little more time in the morning.
Healthy Strawberry Chocolate Chip Muffins
- 1 and 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 cup + 2 Tablespoons unsweetened applesauce
- 1 egg white, beaten
- 2/3 cup diced strawberries
- 1/3 cup mini chocolate chips
Preheat oven to 350F degrees. Spray a muffin pan with nonstick cooking spray. Set aside.
In a large bowl, gently toss the flour, baking soda, and cinnamon. Set aside. In a separate bowl, mix the brown sugar, granulated sugar, and applesauce until together until no brown sugar lumps remain – a fork works well to break up the brown sugar here. Add the beaten egg white until fully incorporated. Add the wet ingredients to the dry until *just* combined – do not overmix. Fold in the strawberries and chocolate chips.
Divide the batter evenly between 10 muffin cups. Bake for 15-20 minutes. Muffins will be lightly golden in color and a toothpick inserted in the middle should come out clean. Mine took about 17 minutes. Allow muffins to cool and enjoy!

Raspberry Cream Smoothie
3 cups frozen raspberries
2 cups orange juice
2 cups frozen vanilla yogurt
2 cups (fat free or low sugar if desired) raspberry yogurt
2 small bananas, cut into pieces and frozen (making 1 cup)
2 tsp vanilla extract
- Put all of the ingredients in a blender
- Blend until desired consistency
